Almond Date Energy Balls

Dates sweeten these entirely on their own — no refined sugar — while almonds add vitamin E and healthy fats, and cacao brings its own flavanols. A two-bite snack that satisfies a sweet craving without the crash, and keeps for a week in the fridge.
Tip: If the mixture won't hold a ball, your dates are too dry — soak them in warm water for 10 minutes and drain well before blending, and it'll bind every time.
Ingredients
- 1 cup medjool dates, pitted
- 1 cup almonds
- 2 tbsp cacao powder
- 1 tbsp almond butter
- 1/2 tsp vanilla extract
- Pinch of salt
- Desiccated coconut and extra cacao, to coat
Method
- Blitz the almonds in a food processor into a coarse meal.
- Add the dates, cacao, almond butter, vanilla and salt and blend until the mixture clumps together.
- If it's too dry to hold, add a teaspoon of water; if too wet, a little more ground almond.
- Roll into 12 balls, then coat half in coconut and half in extra cacao.
- Chill 30 minutes to firm up before serving.
