Two anti-inflammatory heavyweights on one plate: salmon's EPA and DHA omega-3s, and a turmeric rub whose curcumin the fish's own fats help carry. Roasted alongside asparagus, it's a weeknight dinner that does more work than almost anything else in this chapter.

Tip: Add the black pepper to the turmeric rub, not just for seasoning — piperine makes curcumin far more absorbable, and it's most effective mixed right in with the spice.

Ingredients

  • 2 salmon fillets
  • 1 tsp ground turmeric
  • 1 tbsp olive oil
  • 1 garlic clove, grated
  • Pinch of black pepper
  • 1 bunch asparagus, trimmed
  • 1 lemon, half juiced, half wedged
  • Fresh dill, to finish
  • Salt

Method

  1. Heat the oven to 200C. Mix the turmeric, half the oil, garlic, pepper and salt into a paste and rub over the salmon.
  2. Toss the asparagus with the remaining oil and salt and spread on a lined tray.
  3. Sit the salmon among the asparagus and roast 13-15 minutes until the fish just flakes.
  4. Squeeze over the lemon juice and scatter with dill.
  5. Serve with lemon wedges alongside.
