Ingredients

  • 1 cup dry red lentils, rinsed
  • 1 can full-fat coconut milk
  • 2 cups vegetable broth
  • 1 tablespoon curry powder
  • 1 teaspoon minced ginger

Method

  1. Sauté the ginger and curry powder in a pot for 1 minute.
  2. Add the red lentils, coconut milk, and broth.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes until the lentils are completely soft and the dal is thick and creamy.
