Dal is an Indian staple for a reason—it is cheap, incredibly flavorful, and a nutritional powerhouse.
Fiber benefit: Red lentils break down completely when cooked, making their massive fiber content incredibly gentle on sensitive stomachs.
Ingredients
- 1 cup dry red lentils, rinsed
- 1 can full-fat coconut milk
- 2 cups vegetable broth
- 1 tablespoon curry powder
- 1 teaspoon minced ginger
Method
- Sauté the ginger and curry powder in a pot for 1 minute.
- Add the red lentils, coconut milk, and broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes until the lentils are completely soft and the dal is thick and creamy.
