There is a reason soup is the ultimate comfort food. This version is packed with fiber-rich lentils and whatever veggies you have in the fridge. It is basically a hug in a bowl.

Fiber benefit: Cooking vegetables in soup softens their tough cellular walls, making their massive fiber content much gentler on a sensitive gut.

Ingredients

  • 1 cup dry green or brown lentils
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 2 cups fresh spinach

Method

  1. Sauté the onion, carrots, and celery in a large pot until soft.
  2. Add the lentils, broth, and tomatoes.
  3. Bring to a boil, then reduce heat and simmer for 25-30 minutes until the lentils are tender.
  4. Stir in the spinach right before serving until wilted.
