"Feel Good" Lentil & Veggie Soup

There is a reason soup is the ultimate comfort food. This version is packed with fiber-rich lentils and whatever veggies you have in the fridge. It is basically a hug in a bowl.
Fiber benefit: Cooking vegetables in soup softens their tough cellular walls, making their massive fiber content much gentler on a sensitive gut.
Ingredients
- 1 cup dry green or brown lentils
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 cups fresh spinach
Method
- Sauté the onion, carrots, and celery in a large pot until soft.
- Add the lentils, broth, and tomatoes.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes until the lentils are tender.
- Stir in the spinach right before serving until wilted.
