Everything green in one bowl is not a gimmick — broccoli brings sulforaphane, peas bring plant protein, avocado brings the fats that carry the fat-soluble vitamins in all of it. The herb dressing is where the flavour lives, so make more than you think you need.

Tip: The dressing doubles as a dip and keeps two days with the lime juice in it — press cling film onto its surface to keep the green bright.

Ingredients

  • 1 cup quinoa
  • 1 head broccoli, in small florets
  • 1 cup frozen peas
  • 1 avocado, half sliced, half for dressing
  • Large handful coriander and parsley
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 2 tbsp pumpkin seeds
  • Salt and pepper

Method

  1. Cook the quinoa. Roast or pan-char the broccoli until the edges catch.
  2. Blitz half the avocado with the herbs, lime, olive oil, a splash of water, salt and pepper into a pale green cream.
  3. Stir the peas through the hot quinoa so they defrost in its heat.
  4. Bowl the quinoa and peas, top with broccoli and sliced avocado.
  5. Drizzle the dressing generously and finish with pumpkin seeds.
